2015 Minuit Syrah-Ciel du Cheval

Red Mountain      Washington State       Syrah

AVA: Red Mountain * Elevation: 700 Ft.  *   Exposure: South West  *  Soils: Sand Loam  *  Clone: Tablas Creek  * Harvest Date: August 7 th, 2015  *  Native Yeast Fermentation   * 100% Whole Cluster  *  Elevage: 11 months in terracotta amphora and 6 additional months in 5-year, air-dried 228L barrels.


This is special wine everyone told us not make.  We drew inspiration from wines we tasted that were raised in amphora.  We felt that maybe this vessel could be the answer to peeling away some of the ragged tannins created by fermenting Syrah 100% whole cluster.  We added no sulfur and let the spontaneous fermentation take over.  We switched between pump over and pigage and finally only hand pressing toward the end.  The resulting wines came out black like midnight with layers of fruit spice and texture.  Through elevage the wine blossomed, starting off with dark, brambly blue fruit then changing over to savory and bloody tones.  After additional six months in barrel,  we couldn't be happier with the result .  Our syrah is rich and exotic, but most of all we believe it will keep you pondering long after the bottle is gone.  Special thanks to Andrew Rich for selling us the grapes!
